Christmas Dinner Recipe: Stuffing


Christmas Dinner Recipe: Stuffing – Great for keeping your turkey moist when it’s in the oven but also delicious in its own right. There are as many different versions as there are cooks. This is mine, with plums and black pudding added in. Ingredients * ½ bunch of spring onions chopped * 300g apples sauted in butter * 300g stewed plums * 950g sausage meat * 350g bread crumbs (fresh) * 300g black pudding * 2 sticks celery chopped * 2 tsp mace * 1 bunch chopped parsley * Salt and pepper Method 1. Simply combine all ingredients in a large mixing bowl using the eggs to bind the mixture together. I use gloves to do this but provided you have clean hands, it can be very satisfying kneading it all together. 2. Then simply push the mixture into the cavity in the turkey before putting in the oven. If you have some mixture left over, line a greased cake or loaf tin with some rashers of fine cute bacon and bake the stuffing mixture in that.
